So I have been attempting to cook lately and found out it’s pretty easy with all these cool new apps lately on the internet. And with my family it’s super hard to find a recipe that everyone will eat especially my daughter who will only eat Italian food so I decided on meatballs. I’m not a lover of meatballs but I do love cheese, so I opted for something called the Cheesy MeatBall Bake.
Here’s what you will need : it’s all pictured below as well for much of a “visual learner”
(This is for 20 meatballs)
1 pound of ground beef
1 pound of hot italian sausage ( i used cold, i dont think it matters) I seriously think they just said tat all together to be a little funny-)
1/2 cup garlic (minced) or 4 cloves
1/2 cup parsley chopped
1/2 cup parmesan cheese
1 teaspoon of salt
1/2 teaspoon of pepper
1 cup italian bread crumbs
1 cup of milk
24 ounces of marinara sauce
2 cups of mozzarella cheese.
So first you combine the ground beef, sausage, garlic, parsley, parmesan cheese, salt pepper, bread crumbs, eggs and milk until it is all fully blended together.
Then you roll the mixture into 4-5 ounce meatballs. It is recommended to use an ice cream scooper, and looking back I wish I would have had one, but it’s not necessary. If you’re serving a dinner party or want your meatballs to look especially perfect then I would highly recommend the ice cream scooper.
Over medium heat on a frying pan, add a tablespoon of olive oil and this is the tricky part- add the meaballs to the pan until both sides are crispy brown which is about 2-3 minutes or until the metball cooks about halfway through. This part I struggled with because you don’t want to undercook and you don’t want to overcook either, so I went with overcooking a bit and left them on the fryer for about 4 minutes each. But you don’t want to worry too much about overcooking them because the rest will cook in the oven.
So then (seen above) take a large casserole dish, put a few drops of the marinara sauce in the bottom just to prevent sticking, and then place the meatballs evenly over the sauce and top them with the rest sof the marinara sauce the mozzarella cheese. Cover in foil and bake at 425 for about 25 minutes or until the cheese is fully melted.
Garnish with the parsley and ka-boom! You have amazing cheesy meatballs that you and your kids will love! It’s great for leftovers too.
